FDA sparks cheese aging dispute in New York

Sens. Charles Schumer and Kirsten Gillibrand have called on the U.S. Food and Drug Administration to clarify guidelines on the centuries-old use of wooden boards to age cheese.

In a January communication to New York regulators, the FDA said wood shelves and boards cannot be adequately cleaned and sanitized, and as such, do not conform to a particular regulation regarding plant equipment and utensils. It expressed concern over the possible spread of pathogens.

The FDA’s communication was posted late last week, sparking concerns nationwide among cheesemakers who said their ripening process was safe.

In a statement issued Tuesday, the FDA seemed to backtrack. It noted that it hasn’t taken any enforcement action based solely on the use of wood shelves and said it would “engage with the artisanal cheesemaking community” to determine the safety of aging cheeses on them.

someone must have told them thats how cheese is ages and has been for centuries.

What are they afraid of moldy cheese....wait for it, wait.

in a way that seems to have been vaguely derogatory. The term eventually stuck in the form "Yankees."

Similarly the term "adirondak" literally meant "bark eater" and was a native american put down of natives who were outcasts and wound up in the harsh environs of the northern mountains.

H. L. Mencken derived it from the slur "John Cheese", applied by the English colonists to the Dutch – "Here comes a John Cheese" – owing to the importance of their dairy cultivation, which introduced the black-and-white dairy cow from Friesland and North Holland to America in the mid-1600s. The modern Dutch for John Cheese is Jan Kaas but this would be spoken Jan Kees in some dialects
