(8,159 posts)A slice of French bread, covered in olive oil, sliced garlic, slice of a hard cheese, broiled until cheese is melted and very lightly browned. Top it all off with a slice of raw tomato.

(11,854 posts)My favorite is Welsh Rarebit, but it sounds like your version is healthier. Welsh Rarebit is toast, served with slices of tomato, drizzled with cheese sauce (cheese, flour, worchestershire and dijon mustard).
The only thing is finding tomatoes that actually taste like tomatoes. Now they're starting to come in, but most of the time they're difficult to find.

(15,214 posts)I like tomato juice. But it's hard to find a brand that doesn't have so much OTHER stuff in it that it makes the benefits of the tomato insignificant.
One of these days, I want the have the time and opportunity to learn to make my own!

I haven't bought juice in a can or bottle in years, because even "100% Juice", isn't.

(1,328 posts)made quite a bit of tomato juice last year. We had an abundance of cherry tomatoes and they worked great for this.
We can ours and it takes some time but definitely not hard to do.
