We`ve been getting these soup bases by Shore Lunch... unbelievably good.. I take the creamy wild rice one and add some sauteed chicken and mushrooms... yummy stuff..

leaving for the fish monger soon. this is a first for me, usually I grill fish or bake it.
so pan searing is new, and have never done roasted Sprouts. I hate boiled ones,
but have read good things about roasted ones. this should be different! surprising the wife, hoping it is a good surprise

I never thought of serving cous cous with eggplant, but it makes sense. Of late, when I make eggplant I dip slices in egg and then in seasoned bread crumbs with some panko added for crunch. What is your batter? And how do you cook it?

non-stick pan. I used to bread them, but this is so light. It's not really a batter, I guess.

Sounds delicious but don't you feel a little sorry for the battered eggplants? Better than pulling pork, I guess, or listening to the screams of lobsters. Not that I'm giving up lamb for Easter.

I make pesto all summer and freeze it for winter. Last year, my frozen pesto lasted until I could make fresh.

(Thickening a chowder is anathema where I come from, but with this one it works. Sort of like some sort of mashed potato soup but with chunks of all the veggies.)

I'd planned to have on pound cake with whipped cream had gone by. (Note to self - eat the blueberries in a day or so. Don't plan to save)

Went to option B - Dole's jarred peaches in fruit juice sans syrup. Worked just as well.

I'll have dinner around midnight, LOL.

But "lunch" was lasagna.

I also had a mesclun salad with small bits of mozzarella in it. The best part of this salad, aside from its freshness, was the balsamic dressing I made. It's a recipe from Richard Blais, whose book is"Try This at Home."
