1. Huevos rancheros, basic Southwest style

Small corn tortillas (browned), refried beans, diced jalapenos, red salsa, a fried egg for each, slivered onion, shredded 3 cheese blend, cumin, cilantro. Avocado & lime on the side.

Steamed dulce tortilla - the same small corn tortilla, filled with sliced strawberries, some brown sugar, vanilla and cinnamon. Rolled tight and steamed, dusted with powdered sugar.

aka - Italian chicken gizzard stew. One of my favorite peasant dishes. Served with some crusty bread.

But I stew my gizzards in chicken stock and some tomato sauce, with onions and celery, and red pepper flakes. After 1.5 hrs, I'll add cut celery, onions and bell peppers for the last 1/2 hr. Grandpa used to put all the veg in at the beginning (making them mush after 2 hrs), but I like the texture when added at the end.

Mixed kale/turnip greens, steamed red potatoes in butter, sauteed curried yellow squash, lima beans (from Kroger) and grilled turkey tenderloin. My sister made a lovely blueberry pie with the last of our frozen blueberries from our bushes.

6. Cajeta Cake

Wanted a dessert, didn't want to go to the store, so dug around in the pantry and found a German's Sweet Chocolate cake mix and a can of Nestle's Cajeta (Dulce de Leche). Didn't think one can of cajeta would cover a large cake, so used half the cake mix, added a little cinnamon, baked cake in 9" square glass dish.

Put cajeta in bowl, added about 3 tablespoons coffee to thin it out. Spread on warm cake. Very tasty.

But.... would have been better with a deeper chocolate cake. Should have toasted some chopped pecans and sprinkled on top of the cajeta and had some vanilla ice cream to go with it.

Going to try this one again.

7. skillet chicken thighs

decided to get the bone-in, skin-on thighs, so i'm going to start them on the stove top and finish them in the oven with some lemon slices. i'll do roasted carrots and either a baked sweet potato or roasted baby yellow potatoes. maybe a simple salad, but i need to make a new batch of dressing. totally hosed the last one.

and salad made with fresh garden greens, caramelized onion, roasted tomatoes, and croutons made out of what we call Judy bread.

Purchased a whole wheat crust. I hear it's easy to make one's own crust, but it sounds like too much work for me.

4 small oranges, 12 chicken skins from thighs I baked. Froze all skinless thighs.. put 8-10 chicken legs in fridge for next few days. will have something else later probably. : )

.....and some spanish rice for those who can handle the carbs. Also guacamole, radishes, limes. Fresh strawberries from the market for dessert!

Tomorrow is freezer jam-making day. Have enough berries for one batch. More next week.
