Farfalle with salmon & leeks

Ingredients
a hunk of leftover barbecued salmon fillet
chicken broth
Black pepper to taste
1 leek, chopped
10-12 Kalamata olives, chopped
1/2 bag frozen artichokes, thawed and coarsely chopped
1/2 pound mushrooms, sliced
1 roasted red pepper, chopped
Olive oil
3/4 pound Farfalle or other medium size pasta
Grated parmesan

Directions
In a large pan, saute leeks and mushrooms. Then add artichokes, red pepper, and salmon (broken up into smaller pieces), and a bit of chicken broth. Season with a bit of black pepper, cover and cook over low heat for 5-10 minutes. While this is cooking, prepare Farfalle. When pasta is done, drain but con't rinse. Add the olives to the sauce, fold in pasta and serve with parmesan cheese.

It won't have quite as much flavor, but go for it. That's why I always buy way more salmon than I know we'll need for a meal.
