Pickled Vidalia Onions. My son gave me a 10# bag of Vidalias last weekend

and some of them were going soft, so I started pickling them yesterday. Made a standard bread/butter pickle recipe with onions and decorated with red/yellow peppers. They turned out so well, that I bought more Vidalias at the grocery today and just cut them up for pickling tomorrow. Used Vidalias sliced 1/4" and a bit of red and green bell pepper for color. Salted/iced them and they will sit that way overnight. Tomorrow I will brine/bottle them.

This house smells like a cross between an onion farm and a pickle factory!

I love them so much. Just two slices of bread and some pickled onions.

I'll probably make more in the coming weeks, along with squash pickles, relish,
and anything else I can think of!
