(146,218 posts)it was delicious. Dark meat, mild with sides of red beans/rice, cole slaw, mashed potatoes/gravy and biscuits.
And leftover chicken for the road tomorrow.
Life doesn't get much better than this.

(2,016 posts)I pulled out a pork chop out of the freezer, and realized it was actually two of them, both so paper thin you could read through them.
So, I'll de-bone them, add some frozen "bag o' chow mein veggies", stir fry it all up, and serve it over some udon noodles I found way back in the pantry.

(39,961 posts)Boneless (or deboned - like to debone mine, actually need to tack on 30 minutes for each cycle if you aren't deboning the breasts or of you are using thights) chicken breasts seasoned then marinated with lime juice, fresh sliced onion and garlic cloves. A tomato slice on top of each of them. Popped into the oven. Cooked around 325 for an hour, flip and topped with another tomato slice, more lime juice, onion and another little bit of garlic. 325 for an hour more.
Flip, Completely cover with BBQ sauce, either homemade or what ever, add another tomato, lime juice and garlic to taste, douse it all with cheese so it melts all over it. Stick it back into the oven for about 25 minutes, or until everything is looking brown.

There are lots of good ideas on there. I liked this one:
Chutney Mayonnaise Dressing
Delicious as a dressing on cold chicken or fish or as a spread for a sandwich.
1 tablespoon olive oil
10 ounce mayonnaise
1 small onion, minced
1 tablespoon curry powder
5 ounce chicken stock
1 rounded teaspoon tomato paste
1/2 lemon, juiced
2 rounded tablespoons chutney
Heat oil in saute pan. Add onion and saute gently about 5 minutes. Stir in curry powder. Cook a few more minutes. Stir in stock and tomato paste. Add lemon juice and chutney. Increase heat. Stir until boiling then simmer for 5 minutes. Remove from heat and cool completely.
Mix mayonnaise into cooled sauce.

Sounds like the chutney dressing would really spice up the chicken.
I like to add a little curry and ginger to chicken dishes. I served the chicken salad on a large spinach leaf with avocado slices underneath.

(50,130 posts)Leftover chicken from the two I roasted the other day. Simmered in chunks with pearl onions, green peas, celery, carrot, parsley. A slurry of chicken broth with a bit of flour and poultry seasoning to taste.
I love having frozen pearl onions on hand.

(24,146 posts)I decided to with comfort food rather than my original curry ides. Grabbed a pack of chicken legs at the store, I'm going to do baked legs and baked taters. It's cool enough today that I can run the oven.

(20,234 posts)I'm in month 3 of sticking to $2 per person per day. I have the extra challenge this month that my husband wanted steaks for the grill. I got a whole strip loin for $40, which was a great deal for 13lbs, but that took the rest of our budget down to $1.33 per person per day.
Tonight I made roasted corn tortillas spread with homemade white bean hummus, and a mexican inspired cole slaw with cumin.
*tortillas - 99¢ for 3 dozen
*slaw:
cabbage - 12¢ per pound
miracle whip - free on my loyalty card
malt vinegar - 49¢ for the bottle after coupon
*hummus
white beans - free off craigslist, but I gave them some herbs from my garden as a thank you (most of the beans are going to my vegan kid, though, she has a big event coming up)
substituted chives from my garden for the onion
lime juice - substituted unsweetened lemon koolaid I got free with a coupon (basically just citric acid)
tahini - crazy markdown ($1.49 for 2lbs) because it was separated, but I put it in the blender and fixed it.
Altogether, it cost about $2 and I should be able to get another dinner for two and 4 lunches for myself from the leftovers.

(35,622 posts)I find these posts really interesting, noamnety. Keep 'em coming. It's quite the challenge. I enjoy seeing how you are so inventive, starting with careful shopping to checking craigslist and what was it you said the other day?--leveraging points from your credit card?

(20,234 posts)Run (or bike) 14 miles, get $5 store credit up to once a week. There's a super kmart near me and they have a full grocery department with fresh produce, a butcher and bakery, the whole works, so that works out perfectly.
