What's for Dinner, Fri., June 13, 2014

I wanted lasagna, but I'm on a low carb diet, so instead of lasagna noodles, I used zucchini, sliced the long way and I used the mandolin for nice, even slices. I used my homemade tomato sauce, which is especially deep and rich in flavor. Turned out fantastic.

I made it late last night for serving tonight, as I have the dishwasher repairman and electricians working in the kitchen today. As of now, the dishwasher is in the middle of the room and nothing's fixed yet, but the electricians are pretty sure their part is done.

Pinto, thanks for your input on velveting yesterday. I'll bet your way would be more flavorful than what my recipe told me. Thanks!

Yep, I get it, Cher... my kitchen too is filled with appliances in the center of the room. Ugh.

I just got back from the grocery store. I'm going with Thai spicy beef noodle soup tonight. Not exactly pho, so call it faux pho?

if it's a good recipe, I never miss the noodles.

Bill brought in some burgundy marinated steaks...so i'm going to try a little of that and some veggies.

Nice afternoon here, so might be fun to walk downtown and eat on the local BBQ joints patio.

My kids have abandoned me in favor of friends' houses today so keeping it simple. Trying to eat up some of the ginormous bag of pea pods I bought from Costco, LOL.

I may have misspelled that. It's a pancake containing cabbage and some sort of meat, served with a sort of barbecue sauce.

chicken boobs were on super sale, so i picked up a big package of those. tonight we're going to grill a few up and serve it over salad. it's 90 degrees and it's too hot to do much else.
