Banh Mi Sandwich with homemade pate de campagne

I made a really delicious pate with heirloom organic pork from the place 2 miles down the road, local ham, pistachios and dried apricots. I gave away a lot, but still had way too much so...

1 baguette

sliced roast port or chicken or turkey

pate, sliced thinly

sweet and sour carrot an daikon

cilantro-sirracha mayo (homemade is best)

soy sauce or Ponzu sauce

English cuke cut in thirds and then sliced lengthwise

scallions, roughly chopped

Cut the baguette into thirds then cut the top third off of each section, hollow out the bottom some

spread both sides with thin layer of mayo

layer other ingredients, sprinkle with soy or ponzu. enjoy
