I screwed up the roast - EDIT: No, I didn't!

I meant to cook it medium rare, I used a meat thermometer, but got scared that it wouldn't be done. I let is set for 20 minutes, and it's juicy but it's medium well in the center .

It's a 2.5 lbs Eye of Round that I tried with the oven searing method - you cook it for 7 minutes per lbs at 500, then turn the oven off and leave it for 2 1/2 hours.

It tastes good, but WAY too done.

EDIT - I let it sit, and the middle is a perfect ruby. It could be less done, but I've never met a piece of cooked meat that I didn't think would be better if it was less done. I like steaks with the breath knocked out of them so that they can't flee the plate.

Anyway, the gravy tastes like absolute sin
