Vegetarian entree' for me tonight.

I'm busy working and probably will be until late this evening, so I'm going to have some barley (known as barley pearls on the package) with mushrooms. I'll top it with vegetables from the Portuguese restaurant, which are loaded with garlic. The veggies are in olive oil and garlic and it's a medley of green beans, carrots, broccoli, Brussels sprouts and grilled yellow and green squash.

With potatoes, chickpeas, tomatoes and coconut milk and mint. Over rice.

I have half a cucumber in the fridge. I may make a cucumber salad for the side. I probably will.

4. A quick dinner

I'm busy tonight, so it's 7 Ritz crackers, one can of tuna, two cups of cottage cheese and an apple. Sometimes you just don't have time to cook!

I'm in such a hurry I even posted in the wrong what's for dinner thread!

5. Lasagna, loaded.

A loaf pan makes 2 or 3 meals for me so I'm all in. Store bought lasagna, cooked just barely al dante. Layered with sliced Italian sausage, sliced zucchini, bell pepper, mushroom, onion, garlic, three cheeses - parmesan, romano, mozzarella - rich red pasta sauce, spices. Slow cooked till bubbly.

Pasta with shrimp, scallops and crab in a rose cream sauce. I *love* replicating recipes from local restaurants.

It's the first time in forever I have actually made dinner for myself.
