Turkish rarebit.

Ingredients
4 c cheese (cheddar or mozzarella)
4 pieces of pumpernickel bread-toasted
1/4 bottle dark beer
1 T turkish red pepper spice
2 green onions, chopped
Olive oil
Toast

Directions
Heat up some olive oil and sauté onions for a minute or two. Then add beer and bring to a boil. Reduce to simmer, add Turkish spice, stir, and add cheese. Whisk in cheese and when it melts serve over toast.

Cheddar (very sharp)
Worcestershire sauce
flour
mustard
salt
pepper
beer

My mom made it about three times a year..it was truly a treat each time..along with (according to the navy (shit on a shingle)) which is Creamed chipped beef on toast...those were two of my favorite meals

I usually make a traditional welsh Rarebit, but sometimes I like to mix it up. It also depends on what ingredients I have on hand.

When I was in the Army the best meal our mess hall served was SOS at breakfast.

Just add a couple of over-easy eggs on top...
