CHOCOLATE OATMEAL NO-BAKE COOKIES

CHOCOLATE OATMEAL NO-BAKE COOKIES
2 cups sugar,
1/2 cup cocoa,
1 stick butter,
1/2 cup milk,
1 tsp. vanilla,
3 cups quick-cooking oatmeal,
1/2 cup peanut butter (optional)
Combine sugar, cocoa, butter and milk in a saucepan.
On medium heat, bring to a boil for one full minute.
Remove from heat.
Stir in peanut butter (optional), vanilla and oatmeal.
Drop by spoonful onto wax paper.
Let cool for at least 30 minutes.

My mom used to make these when I was a kid, though we called them fudgies. Delicious!

I make them at Christmas. I wonder why I don't make them more than that???? They should NOT be a once a year treat!

I add just a teeny bit more cocoa, butter and a 1/2 cup of coconut with the quick oats. The little kids on my street who come to visit don't know how easy they are to make and tell me I'm the 'haystack' legend!

Mom put in shredded coconut, too.

Brings back memories.

I've made them a few times. They're surprisingly easy.

Melted butterscotch chips, added peanut butter and chow mien noodles. when cool, but before the mixture sets, stir in some miniature marshmallows. Then drop by spoonful on waxed paper. Don't remember the exact measurements, but it was easy too.

I think I'll make a batch of these chocolate oatmeals and the butterscotch chow mien noodles next time we have a family meet-up, got lots of little kiddies who will love them.

My mother gave me this recipe years ago and I made all the time when my kids were young. I'd always got a request for it when it was my turn for refreshments for Brownies, Campfire Girls or Boy Scouts. One of my granddaughters asked me to make them a few years back. It is almost like a candy and it tastes so good. The portions can get a little off without making much difference. The main thing is to let the mixture cool before adding the marshmallows. If not, the marshmallows will melt and you want them to stay intact.

1 bag butterscotch Chips
1 cup peanut butter
1 can or 1/2 bag chow mien noodles
1 1/2 cups miniature marshmallows

Melt butterscotch chips in top of double boiler. When melted, add peanut butter and mix well. Stir in chow mien noodles, making sure they are well coated. Remove from heat and let cool down. When cool but still not set, add the marshmallows and mix well to coat. Drop by spoon full on waxed paper. Let set until firm. If they are not eaten right away (and they will be if you have any youngsters around) put them in refrigerator.

Don't remember how many they made, I think about 2 dozen.

I was talking with my daughter tonight and told her I listed the recipe for the chow mien noodle cookies, she said that brought back memories of them. I think I'll make a batch so I can make sure the measurements are right.

Anyway you go, the ingredients are all so good that the final product is bound to be tasty!
