What's for Dinner, Tue., Oct. 6, 2015

I'm going to try making a cracker crust pizza. I love them, and I got close with fresh tomato slices, a mountain of delicious mozzarella, olive oil brushed on the crust.

I pop the crust in the oven for about 3 minutes, to let the olive oil and herbs set, then I take it out and put on the toppings. I got VERY close last time to a cracker crust, hopefully this time will be the winner!

Yeah, the real thing.

Since there is no Vietnamese grandma next door, I decided to make it myself. It's gonna take awhile for the broth to come together, but I have time today. (Beef bones, beef stock, cinnamon stick, star anise, clove, sugar, roasted onions, mega garlic, ginger, na'am pla [fish sauce], yadda yadda yadda...)

The house smells AWESOME right now, too bad it'll be another 5 hrs before the broth is done.

Rice noodles, bean sprouts, cilantro, scallions, and using (semi-frozen) NY strip for the raw beef component. Maybe even a jalapeno for a kick.

I've been wanting to do this for years...

It comes out really crispy, but can hang on to the ingredients.

Late work night, so it will be turkey-cheese patties with steaksauce. Lettuce, tomato, and onion on top. Just no bun.

Sweet potato fries to go with, and maybe a little coleslaw with chipotle dressing.

6. Finally got a chance to cook today

Been working and on the run for the last six days. Home today, so I cooked.

Pork Chops, Stouffer's Mac n Cheese, Fresh green beans and ripe tomato slices.

Here is where the plot thickens. I had some apples that needed to be used, so I made a deep dish apple cobbler. Also had some buttermilk that was on its use-by-date, so I made some cinnamon-buttermilk ice cream.

That's it! No more cream top yogurt for breakfast, no butter or cream when cooking and absolutely no sweets for a month.

that I made yesterday, and store-bought multi-grained baguette.

Really, if I ate like this all the time I could spend maybe 40 bucks a week on food, tops.

There's still enough for tomorrow. I think I spent seven or 8 dollars at most on the ingredients, and will get at least four meals from it.

It suddenly cooled off here in Santa Fe, and what I love about winter is making soups and stews.

Except it was on Tuesday because I was too busy yesterday.

I try my best to get in vegetable as a foundation and meals that don't have meats at least once a week.

I'm definitely an omnivore, but I find that if I mix and match proteins, I feel better.

i'm sauteing up red and yellow onions, leek, green onion, shallot and garlic and the kale will join the party shortly. it's what we had on hand.

haven't been cooking much and really need to get back in the habit of it.

and I'm going to steal this recipe for myself, if you don't mind.

Onion, onion, onion, here's my friend garlic, leek, 7 onions, Yum.

Only one thing I would add : Chopped celery or bok choy. The trinity of celery, onion and garlic is pretty amazing.

Hell, I wish I could eat the leftovers from just about anything everybody cooked today on this fine Tuesday!

but the husband ran out of prep steam before he got to it (i didn't home until 1045). i have some soup planned for this week, so i'll toss some of it in there.

the only seasoning was salt, crushed red pepper and red wine vinegar. i thought about adding a can of tomatoes but decided against it (i'm ok with that decision). it's not bad, but it is screaming out for parm and perhaps some fresh basil. unfortunately, i'm out and keep forgetting to pick them up

i have to remember to pick some up. those will be essential for the soup i'm planning.
