Homemade biscuits

I like using the King Arthur Flour biscuit recipe using homemade buttermilk, although the recipe works well using just regular milk. Lately I've been using whole wheat pastry flour instead of AP flour. I find the texture is much better, but the biscuits don't rise quite as much. So unless you have a pretty good biscuit making technique, I recommend using AP flour at first. I also like using half butter and half lard.
