What's for Dinner, Thurs., Aug. 18, 2016

I made a big salmon and tuna salad with hard-boiled eggs, celery, chopped red pepper, and onion. I’m serving it over chopped romaine leaves. Using chow mein noodles for a crunchy topping.

It’s really hot here in Nebraska! Upper nineties, so this will be a cool dinner to have.

Hey, everyone, I’ll be traveling back to NJ over the next three days, so won’t be posting again until Monday. Maybe Galileo or someone else can post the thread, or we can just take a break.

I'm in town for the foreseeable future, so no sweat.

I, too, and going with a salad. Italian-style antipasto: Genoa salami, prosciutto, sharp provolone atop a bunch of salad greens, Roma tomato, sweet onions and peperoncini. Dressing will be a anchovie-olive oil-red wine vinaigrette.

Finally slowly dropping in temps here in the high desert. But it ain't over until it's over (meaning, November for us).

Colorado weather staying in the 80s daytime and 50-60s at night, especially since we are heading into drought and possible wildfires. But our hearts go out to our neighbors in Louisiana and California. We are sending some Colorado people to Baton Rouge and many brave Colorado firefighters to California.

Having tomatoes from our little garden stuffed with celery, hard-cooked eggs and ground ham.
