Thought of Anthony Bourdain this morning

I made myself a veggie omelet with lots of garlic this morning. As I was squeezing a clove af garlic, I remembered something Anthony Bourdain said about garlic presses. Something along the lines of, “I don’t know what comes out of those things, but it ain’t garlic.”

I miss Anthony. Ain’t gonna give up my garlic press, though.

I use a big meat cleaver and a chopping board. I smash the clove with the cleaver, move the blade over the garlic clove to flatten it more, smash again, chop chop chop, slip the blade under the garlic and make sure to get as much of the oil as possible, and deposit it into what ever I'm cooking. No waste. I get every bit of those cloves.

When CNN runs his old shows, I get so sad. I never missed one of his shows when he was alive.

I use the fine mince on my chopping board, then a little salt and mash with fork. The grains of salt break down the garlic when mashed and release all the garlic goodness.

seven episodes of Parts Unknown sitting on my DVR. Still haven't been able to watch them but I will at some point. He was and still is the best ever!!!!

The damn things were hard as hell to clean which pretty much negated any time you might save. They also removed all the control you have over the outcome. Once I got used to processing them with a knife there was no going back.

I didn't watch everything he produced and I never heard that line, but it sounds like classic Bourdain common sense packaged in his own special manner.

It’s a pretty heavy-duty model. You can pop in an unpeeled clove of garlic and squeeze the garlic goodness right into the pan. Then scrape the peel into the trash and put the press into the dishwasher.
