What's for Dinner, Mon., Jan. 7, 2019

Chopped salad with a couple different kinds of lettuces, meaning red leaf, ruffly, and spinach. Carrots, tomatoes, celery, Persian cukes, red onion, and apple. Croutons made of sunflower seeds.

Spicy chicken soup. Has the usual vegetables, but the addition of hot red Thai peppers, minced, and grated parmesan. Tasted it already--really good, and not too hot. It also has bits of spicy Italian sausage in it.

Cherries, cantalope, blackberries and toasted walnuts for dessert.

The Landlady(!) is working late so I'll cook tonight.

Pan-fried double-breaded boneless chicken cutlets.

Egg noodles with a buttery sauce.

Steamed broccoli.

Vanilla ice cream and brandy to ward off the chilly temperatures today.

Described as "Savory, flavorful shakshuka with chickpeas made in 1 pot in 30 minutes! A hearty yet healthy dish suitable for breakfast, lunch or dinner!", although I think it would be a bit much for breakfast.

I've made it a few times and generally double the cumin and quadruple the olives.

The "rice" was from Trader Joe's-

Also, I added the lemon wedges and cilantro.
On my portion, I spanked some Melinda's Naga Jolokia sauce.

Open faced with onion, mustard and cheddar all over it! Celery sticks and ranch.

For dessert I kicked up a pack of maple oatmeal with brown sugar, cinnamon, butter and cream. Had some toast and tea with that.
