What's for Dinner, Fri., Aug. 18, 2020

Appetizer: bean soup served at room temperature. Borlottis, highly seasoned. Earlier they had been cooked in the slow cooker with a ham hock. Lots of herbs, garlic, and just a bit of pepper to make it slightly hot.

Sliced veal with shiitakes.

Breaded zucchini slices with caramelized onions.

Tomatoes and basil in vinaigrette. Garlic.

Cucumbers in sour cream with onions and basil.

Dessert: peaches and basil in ginger honey mixture. Shortbread cookies, crumbled, makes it like a cobbler but no oven heating!

Spicy chai tea over ice.

No salt diced, organic canned tomatoes sautéed ala' Latin/Mediterranean marinade w/ olive oil, garlic, onions. To this, I added leftover Lentil soup (Annie's) and mixed in (Annie's) split pea soup. I also added frozen broccoli and field peas from TJoes.

fresh berries&mixed green salad with blue cheese crumbles.

Yogurt with berries/maple/walnuts for desert.

Hot herbal tea and water.

5. soup makes it easy

to get the recommended vegetables in. Look at all the great veggies you were able to mix in to the one you describe! All that fiber really helps with blood sugar and cholesterol, too.

The RG is not really big on soup, however, he did make this one. The reason he's not is that he thinks it's hard to make a really good soup. And he's right, stock making and all that is time consuming. However, as Anna Thomas says in her book Love Soup, don't let the lack of homemade stock keep you from making soup. Using packaged broths are better than not having soup at all. Anna wrote her cookbook of recipes when she was caring for her mother, who had some type of long-term illness. Thus "love" soup.

The rest of your menu sounds terrific, too! Ummm, berries and nuts.

and low cal. I have gained extra lbs. with the sheltering-in, etc.

But I love the homemade goodness and the easy cooking makes it better.

since I am a late diner, the lighter dinners are the best for restful sleep!

I figured, hey, the tomatoes are only going to be around for another 4-6 weeks here in Jersey.

And it was tasty and worth it.

would be near tramp 'hotel' now but the restaurant went out of business; was a lunch place, and this was one of my favorite lunches! (Good gazpacho too!)
