Eggplant roll-ups with pork and ricotta cheese filling topped with fresh melted mozzarella, cherry tomatoes, Parmesan, and fresh basil.

Home-baked dark-chocolate chip cookies for dessert.

I agree about wraps making a great lunch, PJMcK!

We have been eating Keto for a couple of months now and I found a great cookbook which has helped me tremendously to come up with tasty meals.

Using whitefish caught by my guys last weekend on Flathead Lake!

Tacos are topped with Napa cabbage slaw and yellow pear tomatoes.

I would love to know more about your cucumber salad in sour cream! I have a bunch of cakes to use.

MM, did I ever mention my cousin lives near Flathead Lake? Maybe she lives on the lake; I can't remember. Anyway, I know she does plenty of boating there.

That's a pretty conservative area, isn't it?

Cukes: Sour Cream, mayo, mixed with salt and pepper. If I have it, I'll add creme fraiche, but I don't always have that in the frig. I add a little half n half to thin the dressing. Salt and pepper (Maldon, freshly ground black pepper). Sliced red onion, but white onion will do. Scallions are good, too. Then slivered herbs: prefer dill but sometimes use basil or mint.

I use my mandoline to slice the cucumbers and onions.

It was heavenly...thank you so much.

Lake County....around Flathead Lake is quite conservative. Unfortunately. Flathead is the biggest freshwater lake west of the Great Lakes. It is stunningly beautiful. Insanely expensive. We don’t have a place there but take our boat there often...it is only an hour and thirty minutes from home for us. The fishery is healthy and the waters are crystal clear. The lake is big and the water is often rough...I can’t do big waves even though our boat can handle it, so when it is rough, my guys drop me off on Wild Horse Island for a few hours. It’s a magical place. Pristine...and yes, there are wild horses. I don’t mind being left alone there one bit.

5. Simple Italian tonight

We took a 15 mile kayak journey down the river today so we're pooped. Simple dinner for tonight.

Linguini with a homemade sort-of Puttanesca tomato sauce. We've harvested more than two dozen beefsteak tomatoes from the Landlady(!)'s garden so I made a few jars of sauce the other day. It has the usual: Garlic, oregano, capers, several kinds of sliced olives, etc.

A large Caesar salad with slices of grilled chicken along with a loaf of garlic bread to balance the pasta.

Chianti, of course.

Seedless red grapes for dessert.
