It started with a bit of pandemic panic shopping in which I bought some shelf-stable milk. It reached its expiration date this week, so I mixed it with some yogurt culture and put it into my Instantpot on the yogurt setting for 8 hours. It made kind of thin yogurt, so I strained it in the fridge overnight to make Greek yogurt. I eat Greek yogurt, but this batch was a bit sour for my taste, so I went looking for a recipe to use it up. I found this olive-oil cake:

Oh my word, how am I just now discovering olive-oil cake? This is like the best cake Ive ever eaten.
