I need knives--any recommendations
I don't want to buy $800 Wusthof Knives, but I need to step up from my $15 Ikea Knife Set.

Any recommendations? I don't want to pay more than $200, but would really prefer to get something around $60 that is satisfactory for the learning home chef.

I've only been using mine for 10 years, though.

2. Henckels
I think they come in different grades. We have a nice set, got them as a gift so I dont know what they cost. But good knives last forever.

3. There is a Brazilian Co., Tramontina
That makes very good knives for a fraction of the cost of Henckels. I have the 12" chef's knife that is in every way comparable to the high dollar German item. Check them out w/a Google search. You won't be disappointed. They make fine pans too.

5. My d-i-l gave me a set
the Miracle Blade knives they sell on the infomercial and also in some stores now. They are pretty good. I was pleasantly surprised. The only thing I would add to that is a good carving knife for meats since all these knives are serrated. But otherwise its a good, inexpensive set.

8. henckels
you can buy a great set in a block on sale for under $100... and the super deluxe set for right around $100. i've had some of mine for over 20 years... wash them by hand and don't store them in the block sharp edge down and they will serve you well for a very long time.

9. Gerber makes excellent knives for the kitchen....
I have a set of their steak knives and I love them. And this is the Gerber cutlery company, which has nothing to do with the baby food company.

12. Gerber quit making kitchen knives
They now make only outdoor recreation products, according to Gerber's website http://www.gerberblades.com.

Which pisses me off to no end because I really liked Gerber Balance Plus and have a few of them...then the fuckers discontinue the series before I can get my chef's knife.

But Henckels is good. I got a Henckels chef's knife and like it a lot.

14. Didn't know that!!
I have the steak knives, the filet knife, the paring knife, and the chef's knife by Gerber. I use them all the time--oh, and I have the meat fork, too.

They have stainless handles as well as blades--really slick looking knives, and SHARP too!

10. check out Ron Popeil's cutlery set . . .
don't know how good they are, but they come with a lifetime guarantee . . . if they're even half decent, looks like a lot for the money . . .

13. Henckels
Good knife, ok on the wallet. For years I used bad knives and I am surprised I still have fingers. Get a sharpening steel and use it - miraculous.

Good set of Henckles can be passed down to the grandkids.

BTW, if you live in Chicago, I know the best knife store around. Real cheap good quality stuff.

Never buy at a department store. If there is a meatpacking area near where you live buy a the place where the meatpackers go.

15. Remember the recommendations and check the Segundas before you go
to retail that sells brand new stuff. I pick up really nice quality knives by picking through the offerings at the many Segundas around here. A good knife will feel solid and balanced in your hand. It will have a blade that tapers from the handle to point and not be over flexible. Also, if you see any staghorn carvers buy them. They're cool.
