1. There are many...
but I highly recommend you use one that calls for sage.

2. Pork roast
Rub thoroughly with a mixture of equal parts salt, cayenne pepper and cumin. Prick and insert fresh garlic slivers. Roast at 350 degrees till well done; cover if it starts to get too brown. You can add onions, carrots and potatoes about an hour from finish if you want a one-dish-does-it-all meal. Make gravy from pan drippings.

3. Simple recepie
I usually just pour a little marsala and olive oil over it, sprinkle some garlic and basil, and pop it in the oven at 325 for a couple of hours.

Make sure the fatty side is up. It slowly melts down and keeps the roast from drying out.

5. What cut are you using?
I use sirloin roast, lean and wonderful. Mix Cumin, onion powder (not onion salt), garlic powder (see previous) and a bit of lite salt, rub on the meat. Sear in a bit of hot olive oil then insert meat thermometer and roast uncovered (about 1-1 and an half hours) Add a bit of water to pan during cooking (just a bit, 1/2 inch or less)

Meanwhile, make some rice. Serve roast with rice and green enchilada sauce (old el Paso works) Wonderful stuff.

Leftover pork roast is great to make fried rice with.

Another good way to fix pork loin, sirloin or tenderloins:
season with some allspice, onion and lite salt. Sear in a bit of hot oil then roast, again with a bit of water in the open pan. Cook rice. Saute some chopped onion, celery & apple is a bit of butter fortified with a bit of olive oil, till onions and celery slightly tender. Add rice when roast is about done. Toss in some chopped figs and/or raisins (dark is ok, golden raisins better if you have them. Add some allspice, nutmeg, or mace (the spice, not the spray ;) ) just before serving.

6. Recipe for a pork roast-
Very simple--Take any poundage of pork roast, brown it on all sides.

Put a can of cream of mushroom soup -undiluted-over it. Put in a pot with tight lid, or cover with foil to seal.
Put in the oven at 325-350 degrees for 1 hour per pound. It will be fork tender.
If you are cooking with gas, use 350 degrees, if you are cooking with electric, use 325 degrees.

7. slather it with honey, set it in a pan on top of some apple slices
(cut across the apple about 1/2 inch thick), and roast.

You can stick cloves in it, too, if you'd like.

8. two suggestions
1. If you have a charcoal grill, prepare it for indirect heating (i.e., you won't want to put the roast on top of a flat bed of coals like you would a steak). Rub the roast with your favorite spices, or just salt & pepper. Put in a meat thermometer and put it on the grill. When it's at the right temp, take it off the grill. Let the roast rest for 5-15 minutes before slicing.

2. Put the roast in a crock pot with onions and a bottle or two of green taco sauce. Cook slowly on "low" til done.

Good luck!
