Teresa H. Kerry Pumpkin Cookies
Here is the recipe from Family Circle for TH Kerry's Pumpkin cookies:
Makes about 8 dozen cookies.
Teresa Heinz Kerry’s Pumpkin Spice Cookies
1 cup (2 sticks) butter, at room temperature
1 cup sugar
1 egg
1 cup canned pumpkin puree (from 15-ounce can; do not use pumpkin pie filling)
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1 cup chopped walnuts
1 cup raisins

Heat oven to 375 F.
With electric mixer, cream butter and sugar. Beat in egg, pumpkin and vanilla. Sift together flour, baking powder, salt, cinnamon and allspice. Stir into pumpkin mixture. Stir in chopped walnuts and raisins. Drop by tablespoonfuls onto a well-greased cookie sheet and bake at 375 F for 12 to 15 minutes, until golden on edges.
Makes about 5 dozen cookies.

I made these with my son the other day. They are a soft cookie, and I think they taste good, but my husband is interested in eating a crisper cookie. Does anyone have any ideas about crisping them up without making them too sugary with extra brown sugar? I'm thinking maybe oatmeal, but wonder if I need something wet to balance that.

Any advice is appreciated.

1. I thought that Laura's cookies probably taste better and seem more
all American, but pumpkin spice cookies are more seasonal for the time before the election. Pumpkin cookies are more appropriate around halloween. Very smart Mrs. Heinz-Kerry.

5. I made LB's choc chip oatmeal ones,
but without the nuts and dried cherries. They were tasty, but I thought the cinnamon was a little too strong, and they turned out too crisp and hard. I may have added too much brown sugar, though, which is easy to do if it is older and more packed.

2. Try a slower oven and longer baking time
Experiment a bit with lower temp and longer bake. My husband likes crisp cookies better too. I bake some fast and hot for me then slow and longer for him and get a bit of variety in the texture that way.

I think there are some tricks about how to store them to keep them crisp but my household cookie monster and his big dog don't give me much time to experiment with storage ;)

11. Ummm.Apparently she does like to bake.There is an article with Chelsea
stating how she did actually make those chocolate chip cookies growing up. My mom was a lawyer who enjoyed cooking, but hated baking! In any event, I doubt Hillary bakes now! LOL!

On Tuesday she told NPR's Susan Stamberg that not only had someone in her office supplied Family Circle's First Lady bake-off contest with her supposed recipe for pumpkin spice cookies, but that "somebody really made it on purpose to give a nasty recipe." "I never made pumpkin cookies," Heinz Kerry said. "I don't like pumpkin spice cookies."
