Question about cooking sausages

Question about cooking sausages

I'm cooking up some breakfast sausages I just bought. They have a thin skin on them. I supposed to cook them up in that skin? Is that skin edible? When I peel the skin away the sausages seem like they would fall apart.

The directions say nothing about peeling away the skin.

1. cook them with the skin
if you're nervous you can poke holes in the skin with a fork, but the skin is just more sausage parts

2. One good way
keep the skins on.......

put just a little bit of water in a frying pan and parboil the sausages until just about done,

then drain the water and brown the sausages

best way to maintain moisture and not burn (sausages or pan)
also - great for brats, boil in beer or water before grilling

Use a non-stick frying pan if you have one (other wise the skin will stick to the pan and tear open when you go turn them over). Use a medium to low heat and poke holes in them with a fork as suggested. Turn up the heat for the last few minutes to brown them. Most breakfast type link sausage shouldn't' take more than 10 minutes. Blot them between paper towels to remove excess grease.

BTW, the skin (correct term is "casing"), is actually pig intestines.

(bet you didn't want to know that). ;)

11. I boil them in water, drain off the fat
and then do this two more times. Then I brown them. Then I drain the remaining fat (yes, there still is some) on paper towels.

For brats, I put them in a big pot on the stove with a whole jar of sauerkraut and two cans or bottles of beer. I cook them for about one and a half hours.
