I just put a big pot of arroz con pollo on to simmer.
Mrs bearfan will be home at 5:50. I already cleaned up the cooking dishes and all I will have left to do is the supper dishes.

My recipe:

Brown a family pack of drumsticks. Drain the fat, set aside.
Dice up 3 green peppers kind of big, an onion, and a few cloves of garlic. Open a large can of whole tomatoes and 4 cans of fat free chicken broth. In a large nonstick pot add about a half a cup of rice. Put in a little oil and fry the rice but don't let it get brown. Add the onions, green peppers, garlic, drumsticks, and chicken broth. Cut the tomatoes into quarters and add them along with the juice. Add salt and pepper to taste after it is done. Don't taste the broth because the chicken isn't done yet(selmonella). Put on a heavy lid and let it simmer about an hour to an hour and a half. The secret is to simmer it slowly. Good leftovers the next day too.
