Any cheese experts here?
My friends and I go to Sanibel Island every summer and last summer we benefited from some women in a nearby cabin. They gave us all sorts of leftovers and one was an Italian cheese. It looked like Parmesan with a black rind. It had a wonderful buttery flavor and we loved it. I'm sure it was not Romano or Asiago , so what was it? I think it started with the letter " M ."

Although that's Spanish. If the rind had a basketweave pattern, that's possible.

Manchego sounds like the one we loved. Thanks to all the people who answered. Hmm...Manchego. Can't wait. Just had the wrong country, I guess.

5. There are lots of black rinded Cheeses.

Bella Lodi is one. In France it is knnown as Black Pamesan.

Parmigiano-Reggiano also comes with a black rind sometimes, and some of this comes from a place in Italy called Modeno, so that might be the "M" you are talking about.

Pecorino Toscano is a hard plack rinded cheese as well.

Even Pecorino Romano comes with a black rind a lot.

Has this confused you any?
