'Comfort food' weather! What are you making?
The weather calls for snow tomorrow, so I'm making beef and noodles, mashed potatoes, red cabbage slaw, 'dollar' rolls and custard pie for dessert. What are y'all making?

PS-- I'll slap the first person who mentions the word 'carbs'.

2. Stuffed cabbage
mashed potatos, red gravy, sweet corn, dinner rolls...

We made and froze 3 dozen stuffed cabbages from our "harvest fest" in early October so we could have some with our son when he comes home for Thanksgiving...haven't seen him in 4 months so this is going to be good.

4. What else?
Spaghetti sauce - the rustic, overwhelmingly substantial kind with big chunks of vegetables - carrots, peppers, onions, celery, zucchini - in it and lots of sausage and pepperoni. It just stays on the stove, barely simmering, and we cook up the macaroni as we desire.

It's only gonna be raining here, but it's still comfort food weather.

18. My newest favorite cold weather casserole....

In a greased casserole dish spread out cooked red cabbage and apples (a Dutch veggie dish), then place on top of the cabbage a layer of sauteed chicken pieces (from chicken thighs) with shoarma spices (Middle-Eastern spice mix here), then cover with a layer of freshly made mashed potatoes. Sprinkle with bread crumbs and dot with butter, about 30 minutes in a hot oven til browned...

my family LOVES this comfort food!

I cheat a bit - I get beef shoulder clod or a few pounds of nice sirloin and cube it into 1/2" pieces, then brown them with garlic and onions and drain, for the meat part.

Then I do rest of the recipe with scratch ingredients (plus one ground chipotle pepper), substituting light beer for water, and cook it in my pressure cooker for about 40 minutes on the lowest setting or medium-low heat after it begins to steam; shoulder clod is really tough meat, but it just falls apart as if it had been slow cooked for hours.

I make the pinto beans separately in a crock pot or just buy them pre-cooked and jazz them up myself.

Spaghetti salad, devilled eggs, and the best goddamn oatmeal cookies you'd ever have if you could have one of them. It's for Thanksgiving dinner, which will be on Saturday at Mom's in Kansas. I'm in Tulsa.

Bake it in a cast-iron skillet. It really gets a nice consistency!

31. Hey - I do live in the south, ya know!
That is THE WAY to make cornbread down here!

Although, when I made cornbread for work, I made it in disposable cake pans for convenience. When I make it for home, I use the cast iron skillet method. I love that I bought my cast iron skillet in a thrift store, and after some TLC, it's my favorite cooking vessel.

My wife is making home-made beef stroganoff for dinner tonight, with leftover organic, farm-raised steak from our saturday night supper. We're having it with egg noodles, another one of my all-time favorites.

And if carbs are supposed to be so 'bad' for you, why do you see all those shriveled old people in those Mediterranean countries? :shrug:

to scold you or anyone else for "carbs." I weigh 110 pounds and eat 60% of my calories from carbs, so there! :)

I'm making a family-favorite comfort food tonight: hamburger hotdish (ground beef browned with onions; chopped tomatoes; tomato sauce; chili powder; red pepper; elbow macaroni)

I'm also making homemade gingerbread.

My boyfriend and my brother and I are having a vegetarian Thanksgiving. We're making vegetable pot pies and stuffing and mashed potatoes with veggie gravy, homemade cranberry sauce and green bean casserole. I cannot wait. I love Thanksgiving!

Lauren's Crock Pot Pork Roast

2-3 lbs. pork tenderloin (or loin)
3 c. apple juice or cider
3 granny smith or golden delicious apples, remove core and seeds, leave skin on, cut into 8ths.
1 c. fresh cranberries
3/4 tsp. salt
1/2 tsp. pepper

Brown salted and peppered pork in saute pan, in couple tbps. of apple cider. Put seared loin in slow cooker, take some of the apple juice and loosen drippings in pan (yummy!) Toss rest of ingredients in slow cooker, apple juice to cover roast, cook on low for 6-7 hrs.


I tried it Sunday. It is ssssssooooooo good. Added onion to the bottom of the slow cooker & some fresh nutmeg & cinnamon on top. Try it. You'll be thanking her, too.
