Deep-fried Turkey!!!
Yum - I got a freebie from a friend doing 4 tomorrow. He just likes to cook and if you've never done it - too much work for only one.

(I'd rather have a spiral-cut honey glazed ham...but, no cooking for me tomorrow.)

11. Turkey fryer safety
Turkey frying can be done safely. Fryer hazards are

Cooking too close to combustible areas.
Cooking too close to play areas, and heavy traffic
Too much oil in the pot before turkey in.
Turkey is not completely thawed out and dry before placing in the pot.
Individual is not wearing protective gear (a pair of barbecue gloves and long armed tongs should be sufficient - and I would even add a pair of safety goggles)

3. I've done it before.
I have a heavy duty fryer made out of a beer keg with a cast-iron burner platform. Have always used peanut oil. Problem with doing it this time of the year in the midwest is that it's hard to keep the oil hot enough to do it right. The temperature of the oil really drops when the bird goes in.

Beer guzzling merkans on carports frying turkeys burn down houses. They are incredibly delicious.

most of them are because they try doing it inside, but some from dropping the turkey into the pot too fast....

13. Fried turkey is popular in Houston....
We've always had a big Cajun/Creole contingent here. But for most of us frying a turkey is a "don't try this at home, kids!" thing.

Therefore, quite a few butcher shops or restaurants sell them pre-fried, or will fry one for you. They also sell turduckens, the "simplest" version of which is a boned chicken stuffed inside a boned duck which is then stuffed inside a boned turkey. (Pick up some andouille while you're there.)
