What kind of cookie shall I bake next?
I'm baking to mail to relatives. So far I've baked lebkuchen, linzer hearts, snickerdoodles, and date bars. I've got a lot of ingredients on hand--I'm missing pecans but have walnuts, almonds, chocolate of all kinds, lemons, butter, and all kinds of other stuff. I'm thinking maybe something not with cinnamon for a change. What would you like?

1. Make Macadamian White Chocolate Chip cookies.
Substitute the walnuts for the macadamians. God, that sounds GOOD! Wish I had time to bake today. :-)

4. Here's a recipe:
I've never tried this one, but it sounds delish!

Macadamian White Chocolate Chunk Cookies

2 cups Macadamian's chopped
2 cups Flour
1 teaspoon Baking soda
1/2 teaspoon Salt
1 cup Butter, unsalted
1/2 cup Sugar
3/4 cup Brown sugar
2 teaspoons Vanilla
1 Egg
2 cups White chocolate chips chopped

Preheat oven to 350°. Spread macadamiannuts on baking sheet, bake until lightly brown and fragant stirring once or twice, 5-7 minutes. Let Cool. greased or parchment paper baking sheets.

In medium bowl mix flour, baking soda and salt.

In a large mixing bowl beat sutter, sugars vanilla, until light and fluffy about 2 min. Beat in egg. Stir in flour mixture until well mixed. Add nuts and chips.

Drop by teaspoons on baking sheet. Bake until edges are light brown and tops don't appear wet. About 10 minutes Let cool then transfer to wire rack to completely cool. Store in airtight container up to 1 week.

5. Sounds good
But I have neither macadamias nor white chocolate chunks. I have white chocolate chips but they're the little ones, not the chunks.

6. You could probably substitute.
This is the one cookie of which I can eat a whole recipe. :-)

It's my favorite, so that's why I'm pushing it. :-)

Whatever you make, I'm sure it will be delicious. The list of items you've already made sounds heavenly. :-)

11. magic bars.
MAGIC BARS

1/2 cup butter
1 1/2 cups graham cracker crumbs
14 ounces sweetened condensed milk (Eagle Brand)
6 ounces semisweet chocolate chips
3 1/2 ounces coconut flakes
1 cup chopped nuts

Preheat oven to 350 F.
In baking pan, melt butter in oven. Sprinkle crumbs over butter and mix together to make crust; pour condensed milk evenly over crumbs. Top evenly with remaining ingredients. Bake 25 to 30 minutes or until lightly browned. Cool thoroughly before cutting. Store loosely covered at room temperature.

7. Lemon Crinkles!
From the original Betty Crocker Cooky Book, 1963. These are fabulous. Do you have shortening on hand?

LEMON CRINKLES

1/2 cup shortening
1 cup brown sugar, packed
1 egg
1 tablespoon grated lemon rind
1-1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp cream of tartar
1/4 tsp salt
1/4 tsp ginger
granulated sugar

Mix shortening, sugar, and egg thoroughly; blend in lemon rind. Sift together dry ingredients; stir into sugar mixture. Roll in 1-inch balls; dip tops in granulated sugar. Bake on ungreased baking sheets for 10 minute at 350 degrees.


Another idea is to make an ordinary dough for rolled sugar cookies, substituting almond extract for vanilla. Cut in small circles, and put a spoonful of preserves or almond paste or some other filling in the center of half the circles. Top with the other circles and seal edges with a fork. Bake for slightly longer than the plain sugar cookie recipe calls for. You could sprinkle them with colored sugar before baking, also.

9. Here's another - Almond Butter Cookies
Also from Betty Crocker's Cooky Book, 1963.

ALMOND BUTTER COOKIES

1 cup butter
1/2 cup sugar
1 cup finely chopped almonds
2 teaspoons vanilla
2 cups all-purpose flour

Cream butter and sugar. Stir in almonds and vanilla. Blend in flour with pastry blender. Form into small balls (scant teaspoonfuls). Place on ungreased baking sheet. Flatten with bottom of greased glass dipped in sugar. Bake 8 or 9 minutes at 350 degrees, or until slightly browned.

10. Oh - and one more idea.
Russian Teacakes! Those are one of my favorites. I usually use finely chopped pecans in them, but many recipes call for walnuts.

15. Yes, and they sort of melt in your mouth.
It's butter, powdered sugar, vanilla, flour, salt and nuts, rolled into balls and baked and then rolled in more powdered sugar. So. Good.

Cream cheese, butter, sugar, flour, almond extract, marichino or dry red and green cherries and rice crispies.

18. oops needs baking powder and salt too
Bridget's Cream Cheese Christmas Cookies

cream till fluffy:
two sticks - 1 cup butter softened
1 pkg - 6 to 8 oz cream cheese softened
1 cup sugar
1/2 tsp almond extract
-----------------------
mix/sift:
2 cups flour
4 tsp baking powder
1/2 tsp salt
--------------
gradually add to butter-cream cheese mixture till mixed well.
refrigerate for half hour or overnight. DO NOT EAT ALL THE DOUGH.
roll into walnut sized balls then roll in lightly crushed rice crispies
place on cookie sheet (ungreased) and press 1/2 cherry in to flatten slightly

Bake 350 for 10 to 15. Very rich and addictive.


Note: marichinos taste the best but the red and green "candied" ones for fruitcake look very christmassy - recipe easily doubled

20. I don't know, but I made this yesterday
and was very impressed how similar it is to the real thing. My grandma lived in St. Louis and would send me authentic gooey butter cake from a german bakery a few times a year.

28. Saltine Cracker Toffee Cookies! They are way popular and easy!!
The chocolate is optional. They are sort of like a Toffee Brittle and the crackers just lighten them up a bit. They are weird, but sooo good!


INGREDIENTS:

4 ounces saltine crackers

1 cup butter

1 cup dark brown sugar

2 cups semisweet chocolate chips

3/4 cup chopped pecans


DIRECTIONS:

Preheat oven to 400 degrees F (205 degrees C).

Line cookie sheet with saltine crackers in single layer.

In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.

Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

30. and if you look on the web there's lot's a variations. I might try with
thick crunchy pretzels pieces. they go really far, too... because they're candyish. You can't wolf down too many.
And they are the best for PMS!
