1. Vegetarian or carnivore?
lentil soup would be good. I use canned lentils. Saute an onion, add garlic powder and chicken broth, then the lentils. Pretty good.

The vegetarian version would use vegetable broth, of course.

13. Rice, peas, and tuna
This is still one of my kids' favorites--I have no idea why. Just cook rice, add peas for the last couple of minutes of cooking, and then dump a can of tuna on top. Simple and it covers all food groups.

Personally, I'm reheating turkey and stuffing for dinner.

8. Delivery.
That's usually my choice for a quick and tasty dinner. ;-)

Otherwise, I usually throw together a stirfry over rice or noodles, or a salad.

fresh veggies (including onions), fresh garlic and chives, all that is missing is some inspiration... and motivation.

Lemon Chicken (well you DO have lemons don't you? In not they are not needed)

I tried to find the Julia Child version on the web with out luck, this is almost close-

1 butter
1 small onions, chopped
1 clove garlic, minced (optional)
2 whole boneless skinless chicken breast halves
1 lemon, juice of

Melt the butter in a saucepan and sauté the onion and garlic

Dredge chicken breast in flour- you may want to pound them thiner first.

Add the chicken and cook on each side for ,

squeeze lemons in to pan, add more butter if needed


I had to make a few changes in this recipe to try to get close to what I want it to be <G> Ok- as I remember it from Julia's book then cooked by my wife. But all you really do is fry chicken breast in butter, add lemon juice. We have rice with it, as the butter/lemon mix is great on rice!

I have already gone in a different direction - but am saving this for future reference.. one can't go wrong (even with variations) with Julia Child.

10. easy quick dinners for us include
1. frozen pizza
2. breakfast-for-dinner ~ eggs or pancakes or waffles
3. Can of SouthWest flavored or Chili flavored beans with fritos or tortilla chips mixed in at serving time.
4. Grilled cheese sandwiches & tater tots

isn't a bad idea... can do a variation of eggs benedict... don't have canadian bacon or english muffins, but have toast and regular bacon (and a yummy holandaise mix)...

Always a favorite for me. Not really a favorite for the others in the home, but if I'm in charge, that's what we are having. I have just suggested to "the others" we could have that meal. They are not in whine mode and I am in charge, so that is what we are having.

How do you make a good white sauce, so that we may have "shit on a shingle"?

16. What I'm having
Grill a couple of sausages or some boneless chicken. Cook pasta. Put pasta in bowl, slice fresh garlic very thin on top, pour a bit of olive oil in, sprinkle with ground cheese and pepper, drizzle with the bottled pasta sauce of your choice, toss in the microwave for a minute to heat up, toss the sausages on top. Dinnertime.

26. Ended up doing a variation of this
have some yummy (frozen) sausage from a local vendor at the farmer's market - am cooking it and some bacon (bought for this weekend - so I want to use it up)...

saute garlic, onions, green peppers with some italian seasonings and tomato sauce... add the sausage and bacon - and serve over pasta.

17. Tuna, couscous, and Raspberry Chipotle sauce.
Slice the tuna into thin strips and grill to taste in a frying pan. (I like them almost browned, my wife likes them seared with a thin raw strip in the middle.)

Any couscous mix will do, and is super quick/easy. Basically boil water, stir in couscous and spice packet that comes with mix, and set aside for 5 minutes. Done.

Plate the tuna and couscous, and drizzle the chipotle over it all.

Yum, and very quick and easy.

just 4 ingredients.

pound of hamburger, bag of spinach, as many eggs as you have or want, at least 6, 1 cup of shredded Parmesan cheese.

break up hamburger and fry, drain grease, put in spinach, cook down, stir up eggs, add, plus some salt and pepper, when eggs are almost cooked, add the cheese. quick and good.

scramble up an egg and fill it with onions, peppers, cheese, mushrooms, and a slice of deli ham.

have a slice of whole-wheat toast with it.


I love having breakfast for dinner.
