Smoking and planking

Try this, you'll love it:

Go to Home Depot, 84 lumber, etc and buy a 12x1x8 piece of untreated cedar.

Get yourself a salmon filet. Cut the wood to the length of the salmon. Lightly coat only one side of the cedar with a little bit of olive oil. Also, make a bed of green onions on the olive oil.

make a reduction of maple syrup (real stuff), low sodium soy, garlic, hot peppers (1 habanero will do you).

Place the salmon on top of the green onions, drizzle the reduction over the salmon and place the entire plank on a grill set at the lowest level.

Come back in 35 minutes. Fabulous.
