Lemon Chicken Ramen Noodles -- WOW!!!

Lemon Chicken Ramen Noodles -- WOW!!!
Okay, as far as I know, I just invented this dish. It was inspired by the wonderful "Everyday Italian" show where she did "Lemon Spaghetti" which was okay, but not great. This, on the other hand, was INCREDIBLE!!!

I used the "Chicken" flavor of Ramen noodles, which turned out AWESOME. Here's what you do:

Cook the Ramen noodles in salted boiling water. While they are cooking, put about two tablespoons of lemon juice, and maybe another tablespoon of Meyer Lemon Olive Oil in a cup. Add the "flavor packet" and mix with a fork until blended. Drain the Ramen noodles, and put into serving dish. Add in the lemon juice, olive oil, flavor packet mixture, and toss until coated. Add grated Parmesan cheese (I like lots), and toss some more. EAT AND ENJOY!!!

I will DEFINITELY be making this dish again; it was quick, easy, and MMM-GOOD!

2. my only objection to ramen noodles is
- last time I looked - they contained a TON of sodium...

sounds yummy, though, and quick.

6. The original "Lemon Spaghetti" called for it. I think...
it is because it makes the Parmesan stick to the noodles, but that is just a theory. You can find the original recipe here: http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_26916,00.html but honestly, I think the "Chicken Ramen" is better. Also, I used the "Meyer Lemon Olive Oil" because I thought it gave a better flavor -- my official favorite (real) Lemon Chicken recipe can be found here: http://www.fat-rat.com/recipes/lemonchicken.html always just completely TASTES lemony all the way through when I use this particular olive oil.
