17. Hmmm - kidney be much like liver - and I do GREAT liver . .

slice the organ into pieces about 1/4" thick or less

Heat up veggie oil (1/2 - 3/4" deep) in a fry pan till water drops make it sizzle

Slice up onions and fry them in the hot oil

Flour, with favorite seasonings, garlic, etc. (yes, batter sort of) the organ slices

Remove onions when done

Fry slices 90 seconds one side (don't overlap)

Flip for 60 seconds

(Times might vary a wee bit depending on thickness and desired tenderness)

Remove and serve with onions, taters(seem to go best with mashed, skins on) and favorite veggies

A white wine(or dry red for that matter) don't hurt either

Works for beef heart too!

8. My mom used to make it sometimes and it was actually very good.
She just soaked it in cold water for a couple of hours, draining and refreshing the water every half hour or so. Then, she pan fried it in a tablespoon or so of olive oil and added diced onions and maybe garlic.

I don't think I could bring myself to eat it now that I've quit red meat, but when I was younger I loved the stuff.

my granddad who used to tell that joke all the time.

Actually, I like kidney either baked or fried. I've also done kidney pie. While not my favorite, I found it reasonably tasty.

Yes, I'll eat almost anything. It's the farm boy in me.

20. Cut in cubes
coat with flour and brown in oil. Add chicken or beef stock and simmer until tender.

But which kind of kidney? Calf, lamb or pork are more suited to human consumption than full beef. Beef kidney does well simmered with rice and fed to the dogs as a treat.

As an aside...if you're cooking kidney, it's gonna stink.
