17-year old's trip to Italy
Our 17-year old son will spend 10 days end of April in
Italy,school sponsored tour.  Rome, Florence, Venice.  Heavily
organized.  He won't be free to explore much, which is fine
with me.

He will be able to pick what he eats.  So we would like to
ensure that he's familiar with what he might see on menus by
serving some before his trip.  

Suggestions please.

find a good family Italian restaurant. Call ahead, and tell the owner your situation. Say you want to come for dinner, and want a menu that reflects what your son will ask for. Go have dinner.

Found in most Italian restaurants.
It's tripe-the stomach lining of cows. He may not be THAT adventurous.

6. tell him to stay away from the restaurants near the train stations
And the ones that are obviously catering to tourists. The best thing to do is follow the locals, or better yet, ask store clerks and people he comes in contact with, for the best-priced trattoria in town.
The Italians are very friendly people and will be more than happy to tell him. It's something they take pride in.
And every region varies as far as food goes, but it will be one hell of a learning experience.

8. A lot of potatoes...!
Pasta with red sauce.

And generally meat of some kind...veal, etc.

Of course, when I went (summer of 2003...I was 16), we had the hotel meals, no choices.
