And I don't cook often, so this is a treat. Smells like an Irish tenement in here.

10. Sorry to rain on your parade-
ya know corn beef and cabbage is not a real Irish thing-it's Ameican-Irish. Why don't you whip up a real Irish dish, colcannon.
Fry some bacon, saute cabbage in the pan, bring some cream to a simmer and add chopped shallots, whip all together with mashed potatoes and serve with a knob of real butter- ummm! A tradition at Hallowe'en but good anytime at all.
