Chicken stock in the making
It's on the stove now and smelling OH SO GOOD!!!!!

I roasted the chicken for dinner last night. It had been marinating in white wine, olive oil, garlic and rosemary all day.

I stuffed the bird w/ onions, peppers and celery and more garlic before I put it in the oven.

Now the carcass is simmering in water with onion, celery, bay leaf, salt, pepper, and a touch of brandy.

Gonna make soup for later in the week.

2. tomorrow night
Tonight we're having homemade spaghetti and meatballs that I also made this weekend.

It was a cooking kind of weekend. Homemade beans, spaghetti sauce and meatballs, roasted chicken, now homemade soup.

I'm hoping I don't have to do too much more cooking for the rest of the week. I'm thinking ham steaks w/ beans one night, soup & grilled cheese another night, grilled chicken & french fries yet another night. We'll probably do a "fend for yourself" night in there somewhere.

3. I've Been Craving Some Really Good Homecooked Food
I've spent most of the last week doing a bunch of landscaping work. Which means I'm too pooped out to cook and end up not eating as well as I should. My arms are sore from the cultivator and the part of me that bends over is a little achy. A lot of laundry and a good house cleaning is in order. Then I think I will do some cooking. That sounded soooooooooooo good. You've inspired me.

4. I wanted to get all that home cooking out of my system
before warm weather came. Once the temperature rises, the oven stays off.
