4. Calories or cholesterol?
If it's calories, just eat less. If it's cholesterol, regular mayo doesn't have that much in it.

Try mixing some mustard into it to disguise the flavor.

13. Hmmm
Well, the "fat" in mayo is all vegetable oil. And the only cholesterol is from eggs. There are probably fewer than six eggs in a quart of mayo, so don't eat a whole quart, and you should be fine.

Now, if it's about your weight (calories), it is high in calories because of the high vegetable oil content. But you can still limit your intake.

Maybe your SO has a book that says otherwise, and I could be full of Bushwa. But I wouldn't go on "everyone knows that" alone.

11. How do they take the fat out of
a product that's made of oil and eggs? More importantly, what the hell do they put in it's place? I take the real thing util I can master making it myself.(alton brown makes it look easy, but it's not)

12. What do they put in its place?
Gums, starches, gels, and other 'delights'; plus they increase the water in the lighter and fat-free versions (it becomes the primary ingredient on the list) and drop the egg yolks entirely from the fat-free version. Oh yeah, they also start adding flavorings and colorings into the product to restore the look of what's gone.

Tasty, eh?

Yuck!

Hellman's Real Mayo -- or No Mayo!

Hellman's is called Best Foods on the West Coast. Same label, same jingle (Bring out the Best Foods and bring out the best), same product.

14. It's very easy to make in a blender
I've never tried making it in a food processor. Getting it out of the blender is a pain, though. And messy.
