Fun with Macaroni and Cheese!
Have a real craving for some good ole fashioned mac and cheese. No, not the processed stuff, but the real deal.

Baked in the oven til the top is crispy.

Gooey, hot melting cheese.

Tangy tomato sauce.

I've got the fixuns' so here goes!! :D Bon Appetit! :)

You must be reading our minds! Of course, we use my mom's baked roni cheese recipe with soy cream and soy cheeses instead, but it's still all good. :hi:

7. Just finished eating mine.
Well, it's my mom's recipe, so it's in Mom-measurements.

Take a half stick of butter or margarine, and melt it in a small saucepan. Take a handful of flour (white, regular kind, as whole wheat can leave an odd aftertaste), and whisk it in. It should be thick, so add more flour as needed. Add spices here, like salt, pepper, and Herbes de Provence. Once that's fully whisked in and smelly nutty, slowly add some Silk soy cream (or the unsweetened Silk works too), whisking well between each addition. When it's the consistency you want, add 2 slices of soy cheese or a couple handfuls of shredded soy cheese. Stir frequently to make sure it doesn't stay gloppy or burn. Turn off burner and stir occasionally.

Boil a huge pot of water. When boiling, throw in at least two different kinds of pasta. Spaghetti's a must, as it fills in cracks, and rigatoni is wonderful. Think both thick and thin. Once the pasta's done, drain it and set aside. In a casserole dish, alternate layers of sauce, pasta, shredded cheese, and more pepper and salt (skip salt if needed for diet--it's just that soy cheese has less salt, usually). Make sure to top it with shredded cheese, although we also like cheese slices.

Bake at 350 for half an hour. Let sit for at least 5 minutes once it's done.

12. We always had our tomatoes as a side dish.
I was just thinking that putting tomatoes in the mac & cheese was odd but we always had stewed tomatoes w/ the mac and the combination was delish!

Here's my mom's stewed tomatoes:

Take several cans of the cheapest possible canned tomatoes. Tear up slices of cheap white bread - add to tomatoes. Add lots of white sugar. Boil until "done" - or at least 20 minutes - or until the Huntley-Brinkley news was over. Serve with Mac and Cheese - it was one of my childhood favorites.
