Looking for a good nacho recipe
Traditional type nacho's for a get together tomorrow night.

We're going to watch hockey and have "pub grub" and it's up to us to do the nacho's.

1. Rachael Ray's Super Nachos
I've tried this recipe and it's very good. Takes almost no time to prepare, but looks like you spent a lot longer. :9

2. The first nachos I ever had were the best but most people
like a lot of junk on them. These are easy:

Jalapeno pepper slices (either in a jar or can)
Shredded Monterey Jack
Shredded Longhorn Cheddar
Tortilla chips

Put one pepper slice on each tortilla chip
Cover with cheese (both kinds in even amounts)
Bake (or broil) 350 for a few minutes.

My kids and husband don't like hot stuff so I usually use salsa on the tortilla chips with the cheese.

I sometimes make mine with green chiles, diced onion and cheese.

Nachos that I've had in Mexico are tortilla chips, refried beans and cheese.

3. Quick, easy, cheap:
Place white corn tortilla chips on a cookie sheet

with a spoon, put a little mild salsa at the center of each chip

sprinkle a little cheddar over the top

5-10 minutes at 375 - munch out!

repeat as needed. Good with Corona or Dos Equis!

4. i do it like you do, but add refried beans to the center of each chip
right out of the can---no need to reheat them.

Just lay out the chips, put some refried beans on each one, some montery jack and longhorn cheese on top (shredded or thinly sliced or torn into bits), add a slice of jalapeno on top if you like (I like!) and pop 'em into the oven until the cheese melts. Yum!

Of course, the lazy way is to bunch all the chips up and dump the ingredients on top, but it's nicer to do 'em one at a time.

serve with sour cream and guac either on the side or dumped on top. plus salsa if you like.

kinda hard to mess up nachos!
