I'm baking Mr Scorpio's Famous Apple Coffee Cake this afternoon!
Here's the recipe again for anyone who'd like to join me in an international Bake-A-Thon:

Mr. Scorpio's Apple Coffee Cake

1/2 cup butter or margarine, softened
2 cups granulated sugar
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
5 cups peeled and chopped apples
1 teaspoon vanilla extract
1 1/2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon

Beat butter at medium speed of electric mixer. Gradually add sugar; beat well. Add eggs, one at a time, beating after each addition.

Combine flour, baking powder and salt; add to creamed mixture. Stir in apple and vanilla extract. Spoon batter into a greased and floured 13 x 9-inch pan.

Combine sugar and ground cinnamon; sprinkle over cake batter. Bake at 350 degrees F for 45 minutes or until a wooden pick inserted in center comes out clean.

3. I printed the recipe also
and will try it out. Sounds easy enough even for me who isn't a baking wiz ... or maybe I just should come to your place and try it there :)

This is an absolutely beautiful apple coffee cake!

I increased the recipe by 50 percent, and sprinkled streusel topping on the cake before baking, instead of the cinnamon and sugar in your recipe.

Streusel topping
8 Tbsp. butter (softened)
1/2 cup sugar
1/2 cup light brown sugar
1 cup flour
1/2 tsp. to 1 tsp. cinnamon (depending on how much you like cinnamon)
1/2 cup chopped pecans (I used almonds)

Cut the butter into small pieces and rub both sugars through the butter with your fingers until crumbly. Add the flour and cinnamon and mix with a fork until the mixture resembles large bread crumbs. Toss with the chopped pecans. Sprinkle over the top of MrScorpio's Apple Coffee Cake before baking.
