The radish, admittedly, is more feverish, but the fire of the radish is a cold fire, the fire of discontent not of passion. Tomatoes are lusty enough, yet there runs through tomatoes an undercurrent of frivolity. Beets are deadly serious."

1. Especially the Mangel-Wurzel
Its beetness endures even in its pollen. (Sorry, I can't continue the quote from memory.)

But I did make a cooked carrot and beet salad a couple weeks ago. I just wish they sold the greens separately. They are delicate and better than spinach or any other variety of greens.

2. They can sure stain any cloth badly too.
I stopped cooking them for that reason. My husband spills a lot and the beets were doing a number to my linens and his shirts.

3. Actually, I Think This Thread Has More to Do With
human passion and the search for eternal life. My comments on greens and cooked salads were a type of hijacking.

I do know that the beet is closely involved with a very special perfume in an unexpected way.

4. I was briefly terrified as a kid
I had beets for dinner and was shocked at seeing red in the toilet bowl later that evening. :scared:
