16. Would anyone happen to know . . .
what is the European (Swiss, German, Italian or French, to be specific) equivalent of Everclear and/or grain alcohol? I ask this because I have a homemade liquer recipe which calls for Everclear, but none of the merchants here have ever heard of it. :shrug: (Please don't say grappa. Grapes are not a grain. :cry: )

Switzerland isn't really known for its amber waves of grain, and I really, really wanna make some homemade kahlua before winter. :cry:

Do you think vodka would be an appropriate subsitute?

Here's roughly the recipe that I've used in the past, but I brewed espresso rather than using "instant" coffee.

22. You could use vodka and use less water to bring up the alcohol...
content. A good vodka doesn't have a strong flavor anyway.

23. Aha! I found you some alternate recipes using Vodka...

Kahlua

Ingredients (Recipe 1)
1 quart water
3 cups sugar
12 level Tablespoons instant coffee
3 cups 100-proof vodka
3 Tablespoons pure vanilla
Bring water, sugar, and instant coffee to a boil. Let simmer 1 hour; cool. Add vodka and vanilla. Bottle and use.

Ingredients (Recipe 2)
3 cups water
4 cups sugar
1/2 cup freeze-dried coffee
3 cups water
1 gallon 80-proof vodka
1 vanilla bean, split lengthwise
Bring water and sugar to boil in one pan. Boil 20 minutes. Cool. Add vodka, vanilla bean, and sugar and freeze-dried coffee mixture. Place in a large jar (gallon container). Shake and stir to mix. When completely cool, cap and let set. Wait two weeks before using. Shake and stir.

a kahlua and cream and a good book on a cold Swiss night! (I'm hoping to convert my brother-in-law from grappa to some more interesting drinks, too. :evilgrin: )

It's about the only way I'll drink coffee anymore. I've used similar recipes before.
