1. Pork loin in cider with rosemary,

8. I've got something similar going
A pork loin stuffed with lemon slices, apples, onions, raisins and crushed juniper berries poaching in cider.

Pies are baking in the convection oven (pumpkin for the traditionalists and key lime for the Parrotheads)

15. All of this sounds pretty good--
even the boiled chicken. I', saving up for tomorrow: ham, sweet potatoes, mashed potatoes, salad, peas w/ mushrooms (guest is bringing them) and pumpkin pie w/ whipped cream.
The kid is visiting the "in laws" in the south east. They were having deep fried turkey, rotele and velveeta dip (I hope not for the turkey), some kind of sweet potato casserole and I don't know what else.

16. Traditional Estonian, minus the blood sausage
Roast pork tenderloin glazed with cranberry jelly
roasted (previously boiled) potatos
sauerkraut
salad
Kringel (a type of slightly sweet yeast bread containing candied fruit)
Spice cookies
and a non-Estonian Jello & Cool whip dish that substitutes for the usual whipped pink farina dessert, because I can never do the farina correctly.

Roasted blood sausage is usually part of this Christmas eve dinner in Estonia, but my family refuses to even think about it.

We made cookies this morning, decorated them in the afternoon and now are in the middle of building the gingerbread house. We are now in the waiting stage. The frosting/glue must dry so we can decorate it. The soup is brewing on the stove.

Hmmm...I need a glass of wine.

(the real ones, not the stuff that comes out of a carboard container), Lima beans, baked sweet potatoes, homemade biscuits courtesy of yours truly, and chicken gravy.

My New Year's Resolution is to put more blood into my cholesterol system ... until then ....

24. We made a beef roast in the crockpot
that we found the recipe for two years ago here on DU.

We baked all day for tomorrow's celebration: pecan pies, lemon chess pies, a fruit tart, and fudge.

Now drinking really good beer. Happy Christmas to all!

29. We just finished baking two large pans of lasagna
and one of eggplant is baking right now. We'll have it with salad and garlic bread. No fish, like the traditional Italian Christmas Eve dinner, but close as we can get on a budget!

We're all helping out while we watch "It's a Wonderful Life." It's nice to have kids who love to cook.

My niece cooked the enormous rib roast.

My nephew-in-law did the roasted potatoes.

Usually, I would do it all....but my 93-year-old mother had a heart attack Thursday night and the family has been relieving me of duties. I spend much time at the hospital.

shrimp and spaghetti so I can get the fridge ready for tomorrow.

I have a turkey thawing, a sockeye fillet waiting to be grilled tomorrow, and sweet potatoes cooking. Cornbread for the dressing was made last night.
