7. I think it's like "fruit" vs. "fruits."
You don't say, "We ate some fruits," even when you ate more than one, but you do say, "They served a variety of fruits."

So...with quiche, you wouldn't say, "We ate some quiches," but you would say, "They served a variety of quiches."
