Refried beans, cheddar cheese, some fresh pico de gallo, guacamole, a dash of sour cream, Spanish rice and onions. And for dessert, some churros. :)

grilled veggies
FRESH cilantro
and some New Mexico hot red or green Chile! :9

Veggie-wise bell peppers and onions belong in there year round, some seasonal squash is a nice addition and portobello mushrooms are a good choice, too. A little cut-up seitan (a wheat gluten product that resembles chicken) is nice to throw in if there's some in the fridge.

It's also real good with a salsa verde and lots of lime and cilantro. :9 That's the best meal there is in the middle of the summer, with fresh veggies from the farmers market, fresh hot tortillas and salsa I canned myself.

ground beef, beans, cheese, fresh onions (lots) and salsa to be more elaborate

or green chili (pork or beef or chicken actually)

Leftover beans, rice, cheese and lettuce from last night, avocado, scrambled egg and salsa, all on a healthy, trans-fat free tortilla.
