Menu at Chez trof tonight: Slumgullion.
My mom used to make this. Funny that you can hardly taste the tomato soup in it.

SLUMGULLION

INGREDIENTS:

* 1 pound lean ground beef

* 1 (11 ounce) can whole kernel corn

* 1 (10.75 ounce) can condensed tomato soup

* 1 (8 ounce) package wide egg noodles

* 1/4 cup grated Parmesan cheese

DIRECTIONS:

1. In a large skillet, cook and stir ground meat until browned. Drain off excess fat.

2. Stir in corn and tomato soup. Simmer while the noodles are cooking, about 10 minutes.

3. Cook pasta in a large pot of boiling water until al dente. Drain.

4. Stir noodles into ground beef mixture, and sprinkle parmesan cheese on top. Serve immediately.

That and a salad will do it.

2. Roasted chicken stuffed with lemons and olives.
Green beans with parmesan cheese.

Sauteed spinach.

Scalloped potatoes.

And lots of cold pinot grigio.

10. m'kay
2 Tbsp peanut oil
2 cups chopped onion (I use sweet onions)

Heat oil in large pan and saute onions in oil for 10 minutes. Then add

1 tsp minced garlic
1/2 tsp dried chili peppers

Saute for 2 minutes and then add

2 cups chopped cabbage (I use green, but the original recipe calls for red)
3 cups cubed sweet potatoes
3 cups tomato juice
1 cup apple juice
1 tsp salt
1 tsp grated ginger
1 Tbsp chopped cilantro
2 cups chopped tomatoes (since I rarely have fresh tomatoes in the winter and almost never have tomato juice, I usually open up two cans of chopped tomatoes in juice and use those. I juice about 1/2 cup of the tomatoes. By the time I've drained the canned tomatoes and juiced the 1/2 cup, I need to add about 1 cup of water to get to that 3 cups of tomato juice equivalent).

Cover and simmer for 15 minutes or until the potatoes are tender (I find it takes closer to 30 minutes).

Add 1/2 cup of natural ground peanut butter and simmer.

Top with chopped peanuts, cilantro, and/or plain yogurt.

Serve over couscous. It'd be good with polenta also.

13. To be honest,
it smells a bit like home brew (hops, maybe?) until you put the peanut butter in it. Don't give up on it before the last step. :D

Hers was with ground beef, onions,peppers,potatoes,and canned tomato sauce, with parmesan on the table so that we could sprinkle our own.

My house tonight will be Chinese, probably tofu shrimp soup and Szechuan chili chicken cubes.

18. Chicken casserole, celery with cream cheese, rolls
And cranberry sauce. Best combo ever.

Chicken casserole:
Parboil about 1-1/2 lb of chicken until done, cut into one inch square pieces

In a 13X9 pan, layer:

A large package of frozen french style green beans.
Top with chicken pieces
Top with a mix of two cans of cream of chicken soup and a cup of sour cream
Top this with a large can of instant stuffing mix drizzled with a stick of melted margarine
Cover with tin foil.
Cook at 350 degrees for 45 minutes. Remove foil and cook another five or ten.

Serve with celery and cream cheese, cranberry sauce and hard rolls.

We will DEFINITELY be having your dish tomorrow, it sounds wonderful!
