The Tabasco® Thread
On this cold, snowy day, I thought we could talk about one of my favorite "hot" things: Tabasco® sauce. What's the strangest thing you've ever put it on? Have you ever tried any of the other varieties, or do you just eat the standard version? Do you have an interesting Tabasco story?

I love to put in on my Italian hoagie (grinder or sub for you non-Philadelphians) instead of oil or mayonnaise.

:wtf: 45 and sunny here. Heading for the 50s.

But, as to your questionon Tabasco, I'll put it on just about anything, but sometimes I prefer not to have the vinegar taste, so I'll have something like Cholula. :9

If you EVER have the chance to visit New Iberia/Avery Island and the Tabasco plant, DO IT!

To me Tabasco is that unidentifiable spice(?)that just makes everything a little zingier. Like deviled egg stuffing. You can't really taste it, but you can tell if it's not there.

9. I went there this past summer
It was definitely a neat place, although a little creepy in a Scooby Doo deserted factory sort of way. You know, the factory in the middle of nowhere, with only 2 cars in the parking lot, a storm brewing, and an old guy at a toll bridge in the middle of a swamp?

The tour was cool. It was interesting to see how little actually goes into making hot sauce. One thing that irked me was their obvious display of GOP support. During the video, they showed all of the places where Tabasco is/has been served. At one point the narrator said, "Even the White House." Then there was a montage of Tabasco reps with Reagan, Bush I, and Bush II. I guess Clinton was a Red Hot man!

11. Hadn't heard about their political leanings.
Did you get any of the "mash" at the gift shop? It's the granular solids left after they pour off the liquid. Very good.

12. No, we were on a tight budget
I just left with the two miniature bottles that we got for free and the idea that I would attempt to make my own hot sauce based on their recipe.

I DID attempt it when I got home, but the mash was covered in solid white mold in about 5 days. I've since learned that I didn't use enough salt in the mash (thus the mold). I will try it again though.

Let me know how you come out.
My father-in-law used to grow Tabasco peppers. He'd throw a double handfull of ripe red ones in the blender with some salt and a cup of vinegar. Strain the liquid into a Mason jar and keep it in the fridge.

20. Probably cayenne
I prefer the taste of cayenne to tabasco. Here's the site where I got the mashing calculations. Tabasco mash needs to be 8% salt and cayenne needs to be 15%. The first time I tried it, I just did the "this should be enough" thing. Obviously, it wasn't.

My plans are to purchase a large amount of cayenne (does anyone know a source?), grind and mix with the appropriate amount of salt, and then ferment in a homebrewing container with an airlock. The final step will be to mix with the vinegar for a few weeks and strain. It's a modified version of the McIlheney recipe.

I used to really love Tabasco® and peanut butter sandwiches. Somehow the sweet/spicy flavor tastes good together.

16. I make a soy-ginger salad dressing with Tabasco® .
Sesame oil, canola oil, rice vinegar, soy sauce, grated garlic, grated ginger root, black pepper, and Tabasco® sauce. I have been known to use Texas Pete®, a fine product of Winston-Salem, NC, when in a pinch.

But I love it on pizza crust. When I used to eat eggs I'd smother them with tabasco. I put a dash in spaghetti sauce. I dip chips in it :-) Mmmm.
