HELP! Old wedge of Romano cheese in fridge - is it still safe to eat????

HELP! Old wedge of Romano cheese in fridge - is it still safe to eat????
I found a big wedge of very expensive Romano cheese in the fridge (huge fridge - Amana) and was wondering if it's still edible. It's darkened in color a bit and was hard as a rock, but it still went through the food processor perfectly. No mold or anything, just a deeper color (more like parmesan now) and almost as hard as a rock. But I need it for a recipe and can't make it to the store. I'm under the impression that old cheese is good cheese, but you never know. It's out of date by 8 months.

I'm not sure what the official line is - but if something looks good, I'll happily eat it.

(No, I don't mean with a straw!)

If it smells like cheese, it should be OK. Then, taste a bit. Trust your senses.

(Visible mold would be the only problem.)

3. Found this:
Wrap this cheese in heavy paper and store it in the bottom of the refrigerator. Unaged, the cheese will keep for two to four weeks. Well aged, it will keep indefinitely.

So if it's not runny, then I guess that means it's aged, and it's okay.

4. Eat it. Romano cheese has a half life of 5000 years.
Chunks of Romano have been found in Roman ruins and have still been edible.

5. Hard cheeses are safe for a long time.
Hey, I'm a mouse. I should know! LOL

I know you said no mold but for future reference: Even when hard cheeses get a little mold you can scrape it off and the rest of the cheese is good to eat. But if soft cheeses get mold, throw them out. The mold will go deep in soft cheese.

Yes, some cheeses are meant to have mold in them, such as the blue cheese family. But for the cheeses that are NOT meant to have mold and they DO, they shouldn't be eaten. :P

Seriously, other than Brie, what are the common soft cheeses? I guess Chevre would be one? Me, I usually stick to Blue (all kinds), Cheddar, Havarti, Muenster...

Okay I'm drooling now. Gotta stop.
