Does anyone have a good Manicotti recipe?

1. Make normal pasta dough.
Cut it into sheets about 5" by 5". Stuff with cheese. Cover with sauce. Bake.



More specifically, I'd use 15oz. ricotta, 8oz. mozzarella, and 4oz. grated parmesan for the cheese. Mix in an egg to bind and some parsley for color. Any good marinara recipe you have is the sauce of choice, and you might want a little bit of melty mozzarella over the top. Cover with foil and bake in a 350 degree oven for about 45 minutes, uncover for the last 5 or so.

6. If you are buying packaged manicotti
cook them on the stove and let them cool on cookie racks.

meanwhile, cook 1/2 pound of ground turkey and 1/2 lb of italian sausage, drain grease and put in a mixing bowl. combine with 1 8 oz package of mozarella cheese and one can of drained tomatos with basil and garlic (Hunts and Del Monte both make them). Stuff the shells with the mixture.

meanwhile, cook 1 pt of heavy cream, oregano to your taste, in the pan used to cook the meat. make sure there are some little pieces of meat still in the pan to mix into the sauce. Cook for about 2 minutes.

Place stuffed shells in a 9x13 pan. Bake covered for 20 minutes at 350. remove, pour sauce over it, and sprinkle with parmesean cheese to taste, and bake uncovered for another 10-15 minutes.

It's good-I got the basic recipe from Southern Living magazine. You can spice it up by using spicy sausage, you can use all sausage and no ground meat, you can use beef or turkey, and it really is easy to make.
